Roasted Garlic and White Bean Dip
Ingredients:
1 bulb of garlic
1 tsp + 1 Tbsp. olive oil
1 can (540 mL) white kidney beans, rinsed and drained
1 tsp. white balsamic vinegar
1 sprig of thyme, leaves removed
salt and pepper to taste
Method:
1. Preheat the oven to 400 degrees F.
2. Trim the top off of the bulb of garlic, revealing the cloves (about ½ inch). Place the garlic on a sheet of aluminum foil and drizzle with 1 tsp. of olive oil. Wrap the garlic in the foil and place in oven. Roast until soft and golden, about 30-45 minutes.
3. Remove the garlic from the oven and let cool. Remove the roasted cloves of garlic and place in the bowl of a food processor.
4. Combine the remaining olive oil, beans, vinegar and thyme leaves with the garlic and process until smooth. Season with salt and pepper to taste.
5. Place in your Gourmet du Village Dip Chiller and serve with pita crisps.
